Preheating the grill: Turn the outermost burners on to medium low, close the lid, and allow the Bull Grill to preheat for 10 minutes. Make the glaze by combining the chipotle, monk fruit, maple syrup, and mustard in a blender or food processor. Blend until all ingredients are thoroughly incorporated. Set aside glaze.
Remove the ham from the refrigerator and set the ham aside to rest at room temperature for 30 minutes. Remove the rind and cut into the fat layer about 1/4-inch deep to lightly score diamond pattern all over the surface.
Using a silicone brush all sides of the ham with the glaze. Place the ham on a foil covered sheet tray or roasting pan cut side down.
Place the ham in the middle and cook until it reaches an internal temp of 140° basting with glaze every 15-20 minutes.
Remove the ham from the grill and allow to rest for 15 minutes before carving.
