Caesar Dressing

Ingredients
  • ½ cup fresh lemon juice
  • 5 large cloves of garlic, cleaned
  • 2 tablespoons dijon mustard
  • 1 cup extra virgin olive oil, good brand
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 tablespoons water
Instructions
  1. In a food processor add the lemon juice, garlic, dijon mustard, salt and pepper. Puree until smooth. Slowly drizzle evoo until an emulsified salad dressing forms. If the dressing is too thick, add a little water to thin it out.
  2. Transfer and hold.
