Black Eyed Pea & Dandelion Greens Salad

Ingredients
  • 1½ cups seeded and chopped tomato
  • 3 scallions, thinly sliced
  • 1 jalapenos, seeded and finely diced
  • ½ medium red onion, chopped
  • 2 medium red bell pepper, charred on the grill , peeled and chopped
  • 2 stalks of celery with leaves, chopped
  • 1 clove garlic, minced
  • 2 (15 ounce) cans black-eyed peas
  • 4 tablespoons red wine vinegar
  • 2 teaspoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 cups torn young dandelion greens (stems removed)
Instructions
  1. Toss to combine all ingredients. Cover and refrigerate at least 4 hours.
  2. Remove from refrigerator let come to room temperature. Add torn dandelion greens and toss; taste and adjust seasoning with salt and pepper before serving.
