Grilled Salmon Salade Niçoise - Happy Mother's Day!

Ingredients
  • ¼ cup Meyer lemon juice
  • 1 teaspoon finely grated lemon zest
  • 1 Tablespoon Dijon mustard
  • ½ teaspoon kosher salt
  • ½ teaspoon finely ground black pepper
  • 1 teaspoon chopped fresh thyme leaves or ½ teaspoon dried thyme
  • ¾ cup extra virgin olive oil
Instructions
  1. In a small mixing bowl or blender whisk together all of the ingredients except the olive oil. Once combined, slowly drizzle in the oil while whisking to emulsify the vinaigrette. Store covered in the refrigerator for up to two weeks.
