Spicy Cranberry and Bacon Relish

Ingredients
  • ½ medium red onion, finely diced
  • 2 jalapeno peppers, finely chopped... your choice whether or not to leave to seeds (I did)
  • ½ cup apple cider vinegar
  • 2 tablespoon brown sugar
  • ¼ teaspoon fine sea salt
  • 4 strips crisp cooked thick-cut bacon, finely chopped
  • 1 to 2 teaspoons Dijon mustard
  • ¼ cup leftover cranberry sauce
Instructions
  1. Add chopped onions and jalapeƱos to a small mixing bow. Stir together the vinegar, brown sugar and salt until the sugar and salt have dissolved. Pour over the onion mixture and let soak for ½ hour. Drain and then stir in the remaining ingredients. The relish will keep covered in the refrigerator for up to 5 days.
