Ginger-Scallion Mayonnaise

Ingredients
  • 1 cup good-quality mayonnaise
  • 2 teaspoon unseasoned rice vinegar
  • 2 scallions, minced
  • 2 teaspoons freshly grated ginger
  • ¼ teaspoon kosher salt
Instructions
  1. Stir together all ingredients until combined. Store in the refrigerator in an air-tight container for up to four days. Best if made at least one hour in advance.
