Lime & Jalapeño Pickled Onions

Ingredients
  • 1 large red onion, thinly sliced
  • 1 to 2 jalapeño chilies, cut in half and thinly sliced - remove seeds if desired
  • ½ cup fresh lime juice
Instructions
  1. Place all ingredients in a non-reactive bowl and stir to combine. Cover and place in refrigerator for 2 to 3 hours, stirring occasionally.
